Each year, Carol organises this hop so we can share cookie recipes and/or add cookie (or sweet treat) recipes to our own files. Some of us also enjoy sharing some Christmas crafty things we've been working on.
I'm sharing my Lemon & Hazelnut Shortbread, which is a family favourite. Who doesn't love lemony, buttery deliciousness?
I originally found this recipe on the side of a packet of flour. I don't normally make the recipes on the sides of packets of things, but this one must have tickled my fancy and I'm so glad that it did.
Lemon & Hazelnut Shortbread
Makes 26-30
Recipe Ingredients:
250g butter, softened
3/4 cup icing sugar, sifted
2 teaspoons finely grated lemon rind
1 egg
3/4 cup hazelnuts, ground – plus a little extra for sprinkling on top
2 1/2 cups of plain flour, sifted
1 teaspoon of baking powder
Lemon Icing:
1 cup pure icing sugar, sifted
1 tablespoon lemon juice
2 teaspoons of water
Method:
1. Preheat the oven to 180ºC or 160ºC if fan forced.
2. Beat the butter, sugar and lemon rind until light and creamy. Beat in the egg. Fold in the hazelnuts, flour and baking powder until a soft dough forms.
3. Shape small balls of dough – approximately 1 tablespoon size and place on baking paper lined trays.
4. Bake for 13 – 15 minutes until slightly golden. Remove and cool. They will firm up when cool.
5. For the lemon icing, combine the ingredients in a small bowl to form a runny icing. Drizzle over the cold biscuits and sprinkle with extra hazelnut.
6. Allow the icing to set and then serve.
* You can substitute the hazelnut for pistachios, almonds or walnuts.
I've been busy making lots of Christmas orders this past couple of weeks, so nothing really new to share here from my sewing room.
