FOOD: Cheesy Corn Fritters {Kids in the Kitchen}



My kids love to help in the kitchen. No, really. They actually, really do. We try to keep it fair and take turns. It's so much easier to have one "helper" at a time, rather than two at once.

The kids made some cheesy corn fritters for lunch - and it is honestly, such an easy recipe that I let them do it themselves. Brave? Insane? Take your pick.

Get your kids cooking with this simple recipe (though you might want to cook/flip the fritters yourself if they can't reach the stove properly.



CHEESY CORN FRITTERS

Ingredients

1 can corn kernels
1/2 cup self raising flour
1/2 cup creamed cottage cheese
3 eggs
1/3 cup of milk
1 tbsp chives (fresh ones if you have them)



Method

Mix everything together in a large bowl. If the mixture is still a little dry, add a little more milk until you get the consistency of pancake batter.

On a low/medium setting, heat a little olive oil in a pan. Use a heaped tablespoon to measure out the fritters in the pan. Cook 4 fritters at once (flipping any more is tricky).


My kids like to dip the fritters in sweet chilli sauce and/or mayonnaise (yep mayonnaise - I agree, yuck!)


NB: I used a smaller gas plate than my usual big one. I'm often impatient and always tempted to turn up the heat... and they burn. Using a smaller one ensures patience.
