Ingredients
Base
100g butter (melted)
200g crushed biscuits (I like using shredded Wheat best)
Filling
100g icing sugar
200g melted milk chocolate (I used dairy milk, but toblerone is good too).
500g full-cream cheese (philly style - not lite)
150g thickened cream
1 tsp vanilla extract
250g pack of Maltesers
Method
Grease a 22cm spring-form tin and line the base with baking paper (makes it easier when it's set).
Combine the biscuits and melted butter. Press firmly in the base of the tin and place into the fridge.
Take a handful of Maltesers and cut into halves/quarters.
Place all of the filling ingredients (except for the remaining Maltesers in the packet) into the mixer and mix at a medium speed for about 60 seconds. The mixture will become light and creamy.
* Don't over-mix as it may split.
Pour over the biscuit base and top with the remaining Maltesers.
Place in the fridge and let it set for a minimum of 2 hours.
Serve to your friends and family and graciously receive a tonne of compliments ;)
