We love baking cookies. Not only for the end product (obviously) but also for the lovely aroma which fills the house and makes it feel homely and happy.
My kids enjoy helping cut the cookie shapes but they especially love sneaking little globs of raw cookie dough and popping them into their mouths – all the while hoping that I won’t notice the flour trail down their shirts and on their chins.
I bought this beautiful Christmas plate and lovely set of cookie cutters at Target last week and had been looking forward to using them.
Here is my Christmas Sugar Cookie recipe. Super easy and best of all, super delicious!
Ingredients:
1 cup plain flour
1 cup rice flour
1/4 teaspoon baking powder
1/4 teaspoon salt
125 grams (1/2 cup) of butter (or margarine)
1/2 cup castor sugar
1 large egg
1 teaspoon vanilla extract
Directions:
Preheat oven to 200 degrees Celsius
Sift the plain flour, rice flour, baking powder, and salt into a bowl.
Mix the butter and sugar with an electric mixer until fluffy.
Mix in the egg and vanilla extract.
Turn the mixer speed down to low and slowly add in the flour mixture.
Flour the work bench, and roll out the dough to approximately 1/2 cm thickness.
Cut out the shapes and place them on a lined baking tray.
Bake for 10-12 minutes. The edges will begin to brown slightly which means the cookies are ready.
Cool on a wire cookie rack.
Decorate and ice as desired.
A plate of Christmas cheer, ready to share and eat.
