When the kids come to Melbourne and visit with their EXTREMELY patient grandmother (or nanny as she is affectionately known), they get involved in a lot of cooking.
Now don’t get me wrong, we have cooking sessions at home and the kids love to get involved, but I end up taking over. Just can’t help myself.
Nanny on the other hand, lets them do and “help” way more than I’d ever feel comfortable with… which of course they love!
Today, Nanny’s cooking session involved chocolate chip muffins with Amelia and then lemon butter with Sam.
Sam is super proud with his efforts and the result. We’re taking home some jars of this delicious spread, to give to his other grandmother and aunty.
Nanny even had some labels at the ready, to make the jars look extra yummy.
Lemon Butter Recipe

Ingredients
4 eggs
3/4 cup of sugar
1/2 cup of lemon juice
2 teaspoons of finely grated lemon rind
125g of chopped butter
Method
Place eggs and sugar into a heatproof bowl
Place bowl over a pan of barely simmering water and whisk until the sugar has dissolved
Add lemon juice, lemon rind and butter
Whisk mixture for 20 minutes until smooth and the butter has melted and thickened enough to coat the spoon
Do not boil as the mixture will curdle
Pour mixture into hot sterilised jars and seal tightly
Makes 2 cups of delicious lemon butter
Spread on hot toast or crumpets.

Mmmm...yum! Must do this when our lemon trees are fruiting again. Hey Sam, enjoy a slice of toast for me with your delicious looking lemon butter on it as I'm too far away to visit and try some myself :)!
