Irish Stew is one of those meals which warm you up on a cold winters day, from the inside out. With the weather turning fresh and blustery, Irish Stew was on the menu at our house last night.
There are a squillion recipes out there in webland, so I thought I'd add another :-)
It's a quick and easy recipe for Irish Stew which I, and my family, love.
Depending on hunger - this will serve 4-6 people
Ingredients:
500g - 750g of lamb - I used a half leg roast
500g potatoes - I use kipfler potatoes because they hold their shape very well
2 medium onions
4 large carrots
1/2 cup flour
Salt & Pepper
2 tbsp oil
1-2 tbsp mixed herbs
3 cups of stock - I used vegetable stock
Instructions:
Place your flour into a shallow bowl or plate and mix in your salt and pepper
Cut your meat into chunky cubes and then coat meat well in your flour mixture.
In a semi hot pan, sear your meat on both sides and then pour it into your slow cooker with the pealed potatoes and chopped carrots.
Slice the onions and cook them in the same pan until they're soft. Add your stock and bring it to the boil. Add this mixture into your slow cooker.
Add your mixed herbs and any salt and pepper to taste. Give it all a quick stir around
Put the lid on and leave it cooking and bubbling away slowly until dinner time.
4 hours on high or 8 hours on low
I served mine with a base of steamed broccoli, green beans and hot crusty rolls.
Serve and dig in! Yummmm!!!
